Crazy Good GF Peanut Butter Cookies

Hola Friends!
Since I've been doing the whole GF thing (it'll be 50 days on monday), I've been looking for delicious gluten free food substitutes. Specifically, I have been trying to figure out how to compensate for my gluteny baked goods cravings! So, I did a little research and came across a Flourless Peanut Butter Cookie recipe that I had seen a few years back on the food network, by Claire Robinson. Because I love sweets made with PB, I decided to give them a try. These cookies were scrumptious, and best of all: easy; with 4 simple ingredients.

Here it is...



Ingredients:
1 Whole Egg
1 Tsp Vanilla
1 Cup Granulated Sugar
1 Cup Peanut Butter (crunchy or smooth- both are delish)

Directions:
First preheat the oven to 350 degrees (F). Then simply mix the ingredients in a large bowl. No need to be specific. However if you want to, you may first blend the egg, sugar and vanilla together to a smooth consistency, and then lastly add the peanut butter to the mix. (Using a hand mixer, or an electric mixer will give you a smoother consistency then mixing by hand would). After the ingredients are blended, place golfball sized balls onto a parchment lined cookie sheet. After all the balls have been formed, create the classic PB cookie hatch marks on each, with a fork. Not only does this create a nice design in the cookie, it also helps flatten the cookie out. Finally, place in the oven and bake for 10 minutes. You will want the cookies to sit for a while after they are out of the oven so that they have a chance to set up. But please note, that the cookies will always have a some-what crumbly consistency.

*For a twist, add about 2 or 3 tablespoons of cream cheese to your batter. It will help smooth out the batter even more!
