Castle in the Sky Cloud Bread

    Yeah, I know... the title of this post is a little frilly and fluffy for simple 'ol "oopsie bread." But, I like to think I'm creative!  ;-)
    This post is to simply, reinforce the idea of Gluten Free cloud/ oopsie bread and its uses. I had been seeing videos and blog posts about this particular GF "bread" recipe for a while and decided to give it a shot myself, as it seemed simple and of course.. cheap!
    So, here is my rendition of the recipe:


Ingredients:
3 Room Temp Eggs- whites in one bowl and yolks in another
1/4 Tsp Cream of Tartar
3 Oz Cream Cheese
A pinch of Salt
A pinch of Sugar

Directions:
    Preheat the oven to 300 degrees (F). Begin by beating the egg whites and cream of tartar together until you reach stiff peaks. Set aside. Next move on the the yolks. Combine the cream cheese, salt and sugar into the bowl with the egg yolks. You can use the same hand mixer that you used for the whites. (But, please be sure that you beat the whites first, as they won't froth up to stiff peaks if the beaters have any other ingredients on them). Beat the yolk mixture for about 3 minutes or until it is relatively smooth. After beating the yolks, carefully fold a small amount of the yolks into the whites with a spatula. Continue to repeat this step in small stages until all of the yolks have been incorporated. Once the mixture is homogeneous, spoon 8 equally circles of the mix onto parchment lined baking sheets. Bake for 25-30 minutes or until golden and set. Allow the bread circles to cool on a wire rack briefly and then place into the fridge in individual plastic bags. Keep refrigerated for about an hour so that the bread has more time to set-up/ firm-up. 

    Once your cloud bread has set-up you are free to use it for whatever you like. I used mine today, literally as bread for a ham and cheese sammie! It was wayyy super delish! (Although, please note- the longer any condiments have sat on the bread, the easier it is to disintegrate and fall apart). I have heard of using cloud bread for PB & J's, french toast and mini pizzas. Please give this one a try. It was totally worth it. Below is a pic of my Ham and Cheese Cloud Sammie!
